Chef Akrame Benallal ‘Maintaining Consistency is the Key to Being a Successful Chef’

Marrakech’s Mandarin Oriental hotel received Michelin-starred Chef Akrame Benallal on February 24.

When asked about his cooking style, the French-Algerian said that he dislikes being swept away by “fashion,” and instead prefers going “old school” and creating something from scratch.

“I choose to maintain consistency, which is one of the most difficult aspects of running a restaurant because you must manage and satisfy people. This is the key to succeed as a chef,” he said.

The award-winning chef disclosed that he wishes to open an incubator to help people, “I want to have this place where I can help.. and I can find amazing talent, he added”

The chef said that the Shirvan Cafe Metisse first opened in Paris five years ago, then in Marrakech, and finally in Doha.
